This recipe is quick, but SERIOUSLY tasty! One of the best I’ve tried. Despite being microwaved, the cake comes out very juicy because of the pineapple, and the fruit blends beautifully with the spices.
You’ll need a microwaveable mould or a deep glass dish that fits into your MW oven.
Ingredients:
For the cake dish:
10g Butter
2 tbsp Brown sugar
230g Pineapple slices
Glacé cherries
For the cake:
125g Butter
1 dl Sugar
1 Egg
2 1/4 dl Flour
2 tsp Baking powder
1 tsp Cinammon
1 tsp Ground ginger (dry)
1 dl Milk
Instructions:
1. For the cake dish: mix the butter and sugar and spread on the bottom of the cake dish – if it doesn’t stick, use your fingers to distribute it evenly. Then lay out pineapple slices and pop glacé cherries in the holes.
2. For the cake: Mix the sugar and butter until creamy. Add the egg.
3. Mix the dry ingredients together.
4. Add the dry ingredients to the sugar, butter and egg.
5. Add the milk.
6. When everything is well blended, pour the cake mix into the cake dish, over the pineapple slices.
7. Pop in the microwave for 6-10 minutes on full power (times will vary depending on the MW oven type).
8. Let the cake cool for about 15 minutes.
9. Place a dish over the cake tin and carefully tip the cake over.
And voilá! Enjoy with a nice cup of tea.
